As my head feels like it's about to explode, sick and lying in bed, I ponder. I believe that it's time that coffee professionals get the pay, recognition and respect that they deserve. If you were to go to a restaurant, I'm sure you'd correctly be able to differentiate a 5 star cook and a cook in the diner. In order to make a coffee sing, you need to understand it not only theoretically but in practice. In the cafe I feel like I'm a conductor, engaging happily with people, remembering their names and stories, sharing and exchanging beautiful moments and giving them happiness through my desire to make the coffee taste as good as it possibly can. When training people how to make delicious coffee, I often make the point that even if you have experience and you know how to make a cup of coffee, it's not enough. From 90% good to 100% leaves us with 10%. This is the difference between a really good coffee and a masterpiece, a coffee that leaves you speechless. It's that 10% difference which should be recognized.
